Easy Eggplant & Chickpea Stew (vegan & gluten-free)
Oct 14, 2022Once the eggplant is roasted, add it to the chickpeas followed by ½ cup water. Turn the heat up to medium high and bring the stew to a simmer. Turn the heat to medium, cover and simmer for 15 minutes. Turn the heat off and let the stew sit covered for 10 minutes. Serve warm with your favorite side dish.
